pickled brussels sprouts

Just when it looks like the canning is almost finished for the season, another great idea or low price on produce presents itself and out comes the kettle once more. We are so close now to everything that is going to be put up being finally put. But there will be one more (different) batch of pickled Brussels sprouts yet, plus the garlic still to pickle, plus some chutney. I’ve been waiting until the season’s canning is done to give a full recap, but the way things are going it may be the dead of winter before that happens.

Mmm, preserving porn…. My orange tree is just about to throw down a crop. This year there will be marmalade, I swear it!

We still have the garlic yet to put up, and some applesauce and turnips, too. I’m thinking about lacto-fermenting the garlic and then pureeing it for storage. How do you usually do up your garlic? This is the first year we’ve ever had this much…hundreds of heads. Turnips I’ll make into a sauerkraut, so only will need to bust out the canning pot for the apples. It uses so much propane to can that I tend to just ferment everything and let it sit around bubbling in crocks and jars.
